Candied Ginger

Candied ginger is a great treat to keep in the house. I was actually first introduced to it at a friend’s house. It’s spicy and sweet and makes a delicious snack. Candied Ginger has health benefits, including being an energy booster and natural digestive. I love snacking on it while doing homework or writing. It’s a versatile and enjoyable treat that adds a burst of flavor and warmth to any snacking routine. The remaining liquid from this recipe makes a great ginger extract.

Quick Tip: Cut the ginger into 1/8-inch circular slices. Thicker slices will not soften fully.

Ingredients

  • 2 1/2 cups water

  • 1 cup peeled ginger, chopped into circular bite-sized pieces

  • 3-inch strip of orange peel (0ptional)

  • 1 cup sugar, plus extra for coating

Directions

  • In a medium-sized saucepan, combine the 2 1/2 cups of water, chopped ginger, and the orange peel (optional). Make sure the ginger is fully covered with water.
  • Place the saucepan over high heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer uncovered for about 10 minutes.
  • After simmering, stir in 1 cup of sugar until it dissolves completely. Keep the heat on low and allow the mixture to simmer for another 15 minutes. Stir occasionally to prevent the sugar from burning. The liquid should reduce by about half, resulting in a thick syrup-like consistency.
  • Once the mixture has reduced and the ginger is tender, remove the saucepan from the heat and let it cool for a few minutes. Take out the strip of orange peel and discard it.
  • Using a slotted spoon or tongs, transfer the candied ginger pieces to a plate lined with parchment paper. Allow the ginger to cool slightly. The liquid can be used as ginger extract and can be stored in a jar in the fridge.
  • While the ginger bites are still warm, sprinkle them generously with sugar. Gently toss or shake the plate to coat the ginger pieces evenly. Let them cool completely, allowing the sugar to crystallize and form a sweet coating.
  • Once completely cooled, you can enjoy the homemade candied ginger immediately, or store it in an airtight container in the refrigerator for future use. The candied ginger will keep well for several weeks.
