1 stick unsalted butter
1 cup sugar
2 large eggs
1/4 cup milk
1 teaspoon vanilla extract
3 bananas (overripe is better)
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup chocolate chips
1/4 cup chopped nuts (walnuts, pecans, etc.)
Directions
- Preheat your oven to 350°F. Line an 8×5-inch loaf pan with parchment paper.
- Melt the 1 stick of butter, then cream it with the 1 cup of sugar;
- Crack the two eggs into the mixing bowl. Whisk them until fully blended and the mixture is smooth. Add 1/4 cup milk and 1 teaspoon vanilla. Blend the milk and vanilla into the batter
- Peel the bananas and add them to a separate bowl. Use a fork to mash them until smooth. Then, whisk them into the batter.,
- Stir in the 2 cups flour, 1 teaspoon baking soda, and 1/4 teaspoon salt until the mixture has no visible dry flour.
- Gently fold in the 1/4 cup nuts and 1/4 cup chocolate if using. Finally, sprinkle the nuts or chocolate over the batter and gently fold them in.
- Pour the batter into the prepared pan. Pour the batter into the loaf pan, using the spatula to scrape every bit from the bowl. Smooth the top.
- Bake for 60 minutes or until a toothpick or cake tester inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, and enjoy!
