Palak Tofu Sabzi (Spinach Tofu Dish)

Ingredients

  • 1 cup red onion, finely chopped

  • 1 tablespoon canola oil

  • 1 black cardamom

  • 2 cloves garlic, minced

  • ½ inch ginger, finely chopped

  • ¼ teaspoon turmeric

  • 14 ounces package of extra firm tofu (or paneer), excess water squeezed out

  • 8 ounces package of spinach, roughly chopped

  • ½ cup diced tomatoes

  • 1 teaspoon salt

  • 1 teaspoon coriander powder

  • 1 teaspoon cumin powder

Directions

  • Drain and squeeze out excess water from the tofu (or paneer) and cut it into a 4×4 grid. Roughly chop the spinach and dice the tomatoes.
  • Heat the 1 tablespoon of canola oil in a large pan over high heat. Add the black cardamom and cook for about 30 seconds until it releases its aroma.
  • Add 1 cup of finely chopped red onion and sauté for about 5 minutes until they turn translucent and slightly golden.
  • Stir in the 2 cloves of minced garlic and 1/2 inch of finely chopped ginger, cooking until they become fragrant, and the onion turns light golden brown.
  • Add the 1/2 cup of diced tomatoes to the pan and use a wooden spoon to break them down into a sauce-like consistency.
  • Sprinkle in the 1 teaspoon salt, 1 teaspoon coriander powder, and 1 teaspoon cumin powder. Mix well to combine.
  • Gently add the cut tofu (or paneer) pieces into the pan, making sure they are coated with the mixture. Be careful not to break the tofu pieces.
  • Add the 8 ounces package of roughly chopped spinach into the mixture. Cover the pan with a lid and reduce the heat to medium. Let it cook for approximately 15 minutes. About halfway through the cooking time, give the mixture a gentle stir to ensure even cooking.
  • Allow the mixture to cook uncovered for an additional 5-7 minutes to evaporate any excess moisture.
  • Serve and enjoy!
