Sauteed Spinach and Onion Side

With any main entree, I am always looking for an easy way to add healthy sides. Yes, there is always salad, but there are other quicker options too. This side is easy to make and a great alternative to salad. It’s simple and sticks to whole ingredients. The caramelized onions add a nice sweetness that elevates this spinach heavy dish.

Ingredients

  • 1 tablespoon olive oil

  • 1 large yellow onion sliced

  • 3 cloves of garlic minced

  • 8 cups of spinach

  • Squeeze of lemon juice

  • Salt and pepper to taste

Directions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the sliced yellow onion and cook for 10 minutes until starting to brown and softened. At the end of this stage, the onions should taste slightly sweet.
  • Mix in the 3 cloves of minced garlic until fragrant. Sprinkle a pinch of salt.
  • Stir in the 8 cups of spinach. Cook until the leaves are wilted. Squeeze lemon juice on top, and add ground black pepper.
  • Enjoy!
