Garlic Parmesan Roasted Cauliflower

I love to make this recipe when I need a quick way to insert vegetables into my meal. This dish works for a healthy lunch or dinner side.

Garlic Parmesan Roasted Cauliflower

Ingredients

  • 1 head of cauliflower

  • 1 tablespoon of olive oil

  • 1 tablespoon minced garlic powder

  • 1 teaspoon paprika

  • 1/2 cup grated parmesan cheese

  • Salt and pepper to taste

  • Fresh parsley

Directions

  • Preheat oven to 400F. Lightly grease a glass baking dish.
  • Cut cauliflower head into florets.
  • In a large bowl, add florets, 1 tablespoon of olive oil, 1 tablespoon of minced garlic powder, and 1 teaspoon of paprika. Mix well.
  • Bake the cauliflower in a glass dish for 20 minutes.
  • Stir the florets around, and sprinkle with 1/2 cup of grated parmesan cheese. Bake for 15 more minutes.
  • Garnish with fresh parsley and enjoy!
