Delicious Chicken Tacos

Tacos are my go-to meal for busy weeknights. They are healthy and easy to make. Plus, I use the leftover meat for my lunch the next day. What I love about this recipe is how there are vegetables cooked with the meat. I usually like to eat my tacos with shredded cheese, sour cream, and salsa. But feel free to use your own favorite toppings instead.

Ingredients

  • 2 tablespoons olive oil

  • 1 medium yellow onion, finely chopped

  • 1 bell peppers, finely chopped

  • 2 cloves garlic, finely chopped

  • 1 pounds ground chicken

  • 1/2 tablespoon paprika

  • 1 1/2 teaspoons ground cumin

  • ½ teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/2 cup tomato sauce

  • 1/4 cup chopped fresh cilantro

  • Taco Shells

Directions

  • Heat 2 tablespoons of olive oil over medium heat. Add the onion, bell pepper, and 2 cloves of garlic and cook until soft and just starting to brown about 10 to 15 minutes.
  • Add the ground chicken, 1/2 tablespoon of paprika, 1 1/2 teaspoons ground cumin, ½ teaspoon dried oregano, and 1/2 teaspoon salt. Increase the heat to high and break the chicken into small chunks. Cook until the chicken is partially cooked, about 5 minutes. Stir in the 1/2 cup of tomato sauce, and reduce the heat to medium-low. Stir occasionally and continue to break chicken into smaller chunks until chicken is cooked through, about 15 minutes. Remove from heat and mix in fresh chopped cilantro. Taste and adjust seasoning if necessary.
  • Fill warmed taco shells with taco meat and other toppings like salsa, shredded cheese, lettuce, onions, and sour cream. Enjoy!
